The glycemic index (GI) is a system that is used to rank foods according to how quickly they raise your blood sugar. The GI value for each food is a number that's determined by comparing how quickly 50 grams of food raises your blood sugar when compared with the effect of the standard of 50 grams of glucose (the simplest sugar that all carbohydrates break down into before they are released into the bloodstream).
